Cognito Coffee Roasters: A small-scale specialty roaster located in Nanaimo, BC. They source only the highest-grade coffees with a Specialty Coffee Association minimum benchmark score of 86 points and up. All their green coffees are graded by coffee sommeliers called âQ-graders: who determine flavour profiles and scores. Cognito's roasting philosophy focuses on hitting the flavour points unique to each varietal, to each region, and to the individual processing methods. Cognito Coffee Roasters honour the bean from farmer to cup.
As a third-wave roaster, Cognito donât generally follow the traditional nomenclature around roast names like âFull Cityâ or around methods like âEspressoâ. Most well-roasted coffees can used in both drip and espresso or any method you like.
Cognito Coffee Roasters believe the bean guides them as they roast. This might sound a bit frufru but roasting coffee is like carving wood â it takes an artisan to find the shape within. The bean wants to be found.
Cognito never ever roast into the overly roasty/bitter zone. Nothing wrong with that for those who like it but itâs just not where their palate leads them. All the beans are roasted light to medium at most. Some are fruity and fresh, some are nutty and chocolatey, and they note this in the flavour profile.
